Quick, Creamy Pasta (with lots of garlic!)

Here’s a really quick pasta dish that we had yesterday for tea. It’s so quick to do you can make the sauce even before the pasta has cooked!

Here’s what you need to cook for 4;

1/2 onion – diced

3 cloves of garlic – crushed

4 slices of bacon – diced

Splash of balsamic vinegar

4 mushrooms – diced

Splash of water

Chicken stock cube (I think you could use whatever flavour you have though) -crushed

200ml of single cream

Pasta for 4

Put the pasta on to cook.

I put a splash of olive oil in the water so the pasta doesn’t stick to itself.

Put a little olive oil in a deep pan (a frying pan would do)

Add the diced onion

Fry them off until translucent and the add the crushed garlic.

I then remove the pan from the heat whilst I dice the bacon. This means the garlic is cooking in the hot pan but it isn’t burning.

Add the diced bacon to the pan and return to the heat to cook.

Dice the mushrooms and add to the pan to cook

Add a dash of balsamic vinegar.

Add a crushed stock cube

Add a little water to the pan to create a little sauce from all the cooking juices of the ingredients.

Next add the cream and turn the heat down so the mixture can simmer and reduce a little.

Here’s your sauce.

The pasta will probably need a few more mins so this is perfect for the sauce to simmer a little. It appears quite runny in the pan but when mixed with the pasta and cooled a little it does thicken up.

Next, drain the pasta

Add to the pan with the sauce and mix thoroughly.

Once the pasta is covered well, it’s ready to serve.

You can have this with a glass of white wine, lots of bread and great company! It’s a really quick and easy dish to do so great for after school or busy Saturday mornings.
